Bacon, Swiss and Green Onion Mini Quiches

Taste better than they look

These little quiches actually turned out to be a lot more popular than I thought they would be.
As I only had a day to prepare everything for a full high tea, I sometime take "shortcuts" in preparation.
The fillings can be made a day ahead, and just drop the freshly cut onions and cooked bacon bits inside before you bake.
and mini tart shells - one of the best inventions of mankind.


Bacon, Swiss  and Green Onion Mini Quiches

Makes 18 mini quiches

Ingredients

  • 8 slices bacon, chopped
  • 4 eggs
  • 1 cup (250 mL) milk
  • 1 cup (250 mL) heavy cream
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup (250 mL) shredded  Swiss cheese
  • 2 stalks of green onion, chopped
  • 18 mini tart shells
  • DIRECTIONS
  • 1. Cook bacon over medium-high heat until browned and crisp, 6 to 8 minutes. Drain off fat and crumble.

    2. Meanwhile, in bowl, whisk together eggs, milk, cream, salt and pepper.

    3. Sprinkle cheese, bacon and green onions into pie shell; pour egg mixture over top. Bake in 375ºF (190ºC) oven until filling is set and knife inserted in centre comes out clean, 55 to 60 minutes, covering pastry rim with foil if browning too much. Let cool in pan on rack for 10 minutes before serving.
  • *if preparing a day before, make egg mixture and refrigerate overnight, add in bacon, cheese and onions the next day into the tart shells.
